Irene Guiñales

Manager at Casa Pedro (Madrid, Spain)

Founded in 1702, although there is documentary evidence as far back as 1825, Casa Pedro, north of Madrid, has always belonged to the Guiñales family.

Irene Guiñales is now at the helm. She took over the baton from her Pedro Guiñales (73 years old), who does not give it up completely. A whole life among cookers and restaurant numbers that Irene initially combined with journalism, which she studied and practised in different gastronomic media.

At the end of the 90s, however, she joined Casa Pedro and has not left since. Since then, he admits, "I haven't stopped learning from my parents and the team that makes up thiscasa, which is a family". Without going any further, many of the current employees already worked with grandfather and father Guiñales. "They are the ones who have really forged the history of Casa Pedro", explains the owner at the controls of a restaurant which, by the way, is said to have been frequented by Alfonso XIII, a lover of his roasts. They are still there.
