Paco Pérez

Chef at Miramar** (Llançà, Girona, Spain)

Pérez means a fondness for the Mediterranean tradition and the produce of his rich marine environment.

He was born in Huelva, although when he was six months old his family moved to Llançà, where he has lived ever since. Fascinated by cooking, at the age of 12 he began work in the tapas bar run by his family, and that saw the start of what was to become his passion.

Paco then began to combine his studies with learning and culinary tasks during the summer holidays at a number of restaurants. Subsequently, he continued his training in France with Michel Guèrard, and back in Catalonia he began to identify with the creativity of Ferran Adrià at elBulli.

He and his wife Montse Serra began to develop her family's hostel - El Miramar - by transforming the traditional restaurant it had been into a gastronomic restaurant, the contemporary cutting-edge restaurant it is today, with two Michelin stars.

Paco Pérez has another two Michelin stars at his Enoteca Miramar (Hotel Arts, Barcelona), and another at his 5-star (Hotel Das Stue, Berlin).
